Duxelles everything

[dook-SEHL, deu-SEHL]
A mixture of finely chopped mushrooms, shallots and herbs slowly cooked in butter until it forms a thick paste. It's used to flavor sauces, soups and other mixtures, as well as for a garnish.






I made a batch of this today and put it in baggies to freeze. Sounds like a great thing to add to eggs, beef, fish, stew and serve as an appetizer!  How have I not known?
